Homemade Cheesy Dill Polenta

Today’s post merges my two great kitchen loves: pressure cooking and air frying.

The pressure cooking devotion likely comes as no surprise to any of you. I posted my first original pressure cooker recipe here over five years ago. I now have over 90 free pressure cooking recipes right here on the website and of course my book Vegan Pressure Cooking: Delicious Beans, Grains, and One-Pot Meals in Minutes came about over a year ago. In the past two days I’ve used the pressure to make:

  • spelt berries
  • black beans
  • brown rice
  • steamed vegetables
  • vegetable broth

I remain cuckoo for pressure cooking.

Recently, an air fryer came into my life. I have used the air fryer every single day since placing it on my kitchen counter. Like the pressure cooker, it’s speedy. Unlike the pressure cooker, this convection method offers up crispy food – a terrific yin to the pressure cooking yang.

I recently brought the two together for terrific results. And it totally worked.

NOTE: I have pulled the recipe down as I have filed a complaint with Amazon against a publisher that lifted the recipe and published it, unauthorized, in a “book.”

  1. … an air fryer vegan hotdog, because, why not, INDEED. ha! I am assuming you just split it open and tossed it in there, yes? 🙂

    I love polenta, especially a crispy preparation. so trying this!

    1. Yep, @spabettie:disqus , split the dog (Lightlife Jumbo) and schmeared a little vegan butter on both sides (a nod to Walter’s Hot Dogs in Mamaroneck, NY)!

  2. I’ve been on the fence about whether or not I should get an air fryer. I LOVE deep fried food, but I worry that the air fryer would be the equivalent of an air popper for popcorn (which I do not like). Is the texture really as awesome as deep-fried texture? I know it’d be so much better for me! I’ve never had anything air-fried.

    1. Bianca, I wish we were neighbors so you could try it! Is it EXACTLY like deep-fried food? No. But it has all the crunchy texture, just not all that grease when you bite into it. I think you would love it but I would hate for you to invest in it and then it not deliver on flavor and texture for you.

  3. Thanks for the recipe. I just got an air fryer and still trying to figure out what to cook in it. Can’t wait to try your recipe. Hope you do more air fryer recipes.
