Johnny Cakes and Black-Eyed Peas

My husband IM’d me the other day at work. No commentary, just a link for Johnny Cakes (from Adventure Journal, no less).  The first thing I did was scan the ingredients to see if the recipe was vegan.  It was.  I IM’d a reply “you make those and I’ll make black-eyed peas in the pressure cooker.”  Later that night the omnivore and the vegan cooked together and made a delicious meal!

Dave started with this Johnny Cakes recipe.  But the ratio of dry and wet didn’t seem right to him so he referred to this oh-so-NOT vegan Bobby Flay recipe and adjusted the amount of water (he did not use sugar) and added diced jalapeno.  They came out beautifully

The Black-Eyed Peas

I rinsed and drained one cup of dry black-eyed peas and tossed them into the pressure cooker. I added three cups of water, three cloves of garlic, one tablespoon Sriracha and a bay leaf. I brought the peas to high pressure for 10 minutes, followed by a natural release of pressure. The Johnny Cakes were still on the griddle so after removing the lid from the pressure cooker I added salt to the black-eyed peas and allowed them to simmer for five minutes.

We were obnoxiously proud—there may have been a high-five, or two—of this rather impromptu plate of simple, vegan, fabulous good eats.

  1. Hey, JL! How do you cook your black eyed peas in a slow cooker? I want some badly, but I don’t have a pressure cooker and they’re a mess on the stove. ~ Nikki

    1. Hey Nikki! I think you could put all of the ingredients in the slow cooker and cook on high for 3 or 4 hours or low for 8 hours (or so) the one variable is the water. I don’t know how much water you would use. I just look up a recipe online and it looked like 1 POUND peas to 3 cups water. Now in the pressure cooker is was 1 CUP peas to 3 cups water. Hope this helps!

  5. Yum! That looks so good. Aren’t pressure cookers the BEST? Although I think mine might be a super pressure cooker because I never cook things as long as books/recipes say to. That amount of time at high pressure in my pot would turn those beans to mush. I can cook unsoaked, dry chickpeas in 12 minutes (letting the pressure come down naturally) … black eyed peas in 4 minutes.. strange… I wonder if it’s because of the electric stove I have which gets REALLY hot.

    1. Hmm, good point about the type of stove. Mine is gas so as soon as the pressure cooker starts a rockin’ I turn the burner down to low and it just gently rocks for the cooking time. I use a basic Presto (6 quart), nothing fancy, so that might have something to do with it, too? And yes, pressure cookers are the BEST! I can’t believe how much I use mine!
