Traditional Sunday dinner? Baked tofu, roasted carrots & leeks + a loaded baked sweet potato

I actually don’t have a traditional Sunday dinner.  I do find that because I cook in bulk on the weekends I have fewer meals and find myself tasting and noshing more. Or going out to eat.  On Sunday evenings, I find myself craving a traditional, sit down dinner.  Or is that supper? 

Growing up, Sunday dinner was actually the meal after church.  A meal after 5:00 p.m. was called supper. I can’t recall if it was after moving to Chicago, or later to New York, when I became a breakfast, lunch and dinner gal?

Anyway, I had a wonderful Sunday dinner (at 7:00 p.m.)

Loaded baked sweet potato:  Microwave a sweet potato for 5 minutes. Add Daiya cheddar cheese, diced raw onion and cashew sour cream (another fabulous recipe from Doug McNish).

Roasted carrots and leeks:  Slice carrots in the food processor (uniform thickness helps the carrots roast evenly) and toss with sliced leeks in olive oil, garlic, salt and pepper.  Roast on 400 degrees for 20 minutes.
